Fresh Herb Seafood Pasta

One of my good friends, Carl, gave me the very fresh herbs. What a treat I got! I just love fresh herbs. I have introduced my seafood pasta last time but this is with many kinds of fresh herbs. Nothing can replace the fresh herbs. Just awesome!

(Fresh Herb Seafood Pasta, 2 servings)

Whole wheat pasta; one and 1/2 cups of pasta
Shrimps; 6 shrimps
Calamari; Sliced 1/2 calamari
Garlics; Sliced 2 cloves
Red Bell Pepper; Sliced 1/2 pepper
Yellow Bell Pepper; Sliced 1/2 pepper
Tomatoes; One medium size of tomato
Olive Oil; 1-2 table spoons
Fresh herbs; sage, oregano, thyme, basil, Japanese basil, ginger, etc.
Natural cheese; 4-5 thin slices
Salt and pepper;

Cook as you do for the pasta dishes, but the natural cheese and the fresh herbs should sprinkle over or lightly mix with the pasta at the end. You can use the dry herbs when you are cooking. Also add other favorite fresh herbs. Enjoy!

Seafood Pasta

Seafood Pasta is one of our favorite menu.
We always enjoy seafood, vegetables, multi-grain pasta any day of the year.

Recipe for two:
1 1/4 cups of multi-grain pasta
6 shrimps
1 calamari
1 fresh tomato
1 can of chopped tomatoes
1-2 T spoon of olive oil
1/8 t spoon of sea salt
Some black peppers
dill
thyme
2 garlics
some fresh basil

Boil the shrimps and peel the shell. Clean calamari. Put a can of tomato and cut fresh tomato into a pan. State garlics and the tomatoes, shrimp and calamari with one or two table spoon of olive oil. Add sea salt and pepper, thyme and dill into the pan and lightly state them. Taste the sauce and add if you need more salt or pepper.
Boil the pasta with some pinch of salt accordingly. Marinade the pasta in the seafood sauce pan.
Serve with fresh basil.

Cold Noodles With Mushrooms

In the hot weather, it will be good to have a bowl of cold multi grain noodles with some vegetables.

Recipe
1-2 sliced mushroom
1-2 sliced Shiitake mushroom
1/6 sliced onions
1/3 teaspoon of olive oil
Soup:
1 cup of Seaweed cold soup stock
1/2 table spoon of soy sauce
1/3 teaspoon of Mirin

Garnish
1/2 teaspoon of chopped ginger
1/2 chopped scallion
1-2 cherry tomatoes

Lightly saute the all mushrooms and onions with olive oil.

Hiyayakko (Cold Tofu Salad) With Herbs

It is the best time of the Cold Tofu Salad (Hiyayakko) in this very hot weather. It is not only nutritious but gives you energy to fight with this very hot weather. You have pure soy protein, ginger for digestion, green onion, sesame seeds, Japanese basil to accelerate your appetite. You also can have vegetables along with this tofu dish.

recipe:
1/2 block of Tofu
1/2 tea spoon of graded ginger
1 - 2 table spoons of chopped scallion
1/3 tea spoon of roasted sesame
1/3 tea spoon of chopped green or purple Shiso (Japanese basil)
1/2 tea spoon of soy sauce (you may use ginger dressing instead)

Multi Grain Brown Rice with Three Kinds of Mushrooms & Sesame Spinach

A wholeness dish of the earth. Brown rice with multi grains mixed is cooked with various mushrooms and vegetables. Accompanied with Spinach sesame marinade.
Recipe for four people:
Rice dish;
1 3/4 brown rice 1/4 mixed wild multi grains
1/2 cup of chopped Shitake mushroom
1/3 cup of chopped Enoki mushroom
1/3 cup of chopped Shimeji mushroom
1/3 cup of chopped carrot. 1/3 table spoon of sliced ginger. One egg.
Seasoning; 2 table spoon of Soy sauce and 2 table spoon of sake wine.

Cook all grains and all other mushrooms, carrot, and seasoning in the pressure cooker with appropriate amount of water or Konbu (seaweed) soup stock (total liquid is around 2 3/4 cups or 3 cups).
Garnish with thin sliced egg crepe and chopped watercress(or scallion) if you prefer.

Spinach sesame marinade;
1 bunch of spinach
Seasonings;
2 - 2 1/2 tea spoons of soy sauce
1/2 - 1 tea spoon of Mirin (sweet rice wine)
2 tea spoons of graded roasted sesame (sesame paste can be used)
1/2 tea spoon of graded ginger
A pinch of red chili pepper or Shichimi pepper.

Steam or boil the spinach for a few minutes in a boiling water (do not over cook), drain the water, and cut them into 1 - 1.5 inch long. Then mix and marinade them with other ingredients (seasonings).

Avocado, Watercress Salad

Very simple but nutritious salad with various kinds of vegetables with the ginger salad dressing, which combined with the six tastes; sweet, bitter, astringent, pungent, sour and salty.
Easy to fix for your meal with other dishes specially for summer time. It is so refreshing.
Suggestion: A slice of multi-grain bread and a piece of natural cheese or a hard boiled egg can be accompanied as a good meal.

Recipe:
1/2 sliced avocado
2 ounce of cut watercress
1 ounce of cut cilantro
3-4 cherry tomatoes
3 ounces of cut romaine lettuce
1 ounce of sliced red, orange or yellow pepper (preferably)
Ginger Salad Dressing:
1 tea spoon of graded ginger
1/2 tea spoon of roasted & graded sesame seeds
1/2 -1 teaspoon of soy sauce
1/2-1 tea spoon of rice vinegar, or wine vinegar
1/3 tea spoon of lemon juice
1/3 - 1/2 tea spoon of olive oil
seasoning herbs; black pepper, thyme, rosemary, cumin seed(if you prefer)

Enjoy The Breakfast on Your Own Way.

Each dish you cook is not only to mix or cook the food but cook the goodness of the nature, which gets into you and your loved ones. Food gives you the happy moments to you, your family and friends along with energy to live.
I used to enjoy my weekend breakfast listening to the music of Mozart's Haydon Set. It was a blissful time with food, myself and the music. Even just a simple breakfast of a piece of multi-grain toast, one egg, some veges with herbs and accompanied with a cup of mint tea.
Maybe with a glass of orange and/or a glass of milk would make a perfect nutritious meal. Nothing fancy but good one with simple preparation. The music brings me the joy of communicating with the music composure. It is a very wonderful way for me to start the day and to get inspiration.
